The Faucet

Side-pull, the way Bohemia poured it.

Horizontal faucet. Restrictor at the spout. The pull breaks the foam on purpose, building a dense cream cap that holds aroma in and slows the warming of the pour beneath it. Every lager on the list is poured this way. Slower than a standard tap. The technique the recipes were written for.
