Our newest hazy pale ale. Hopped both in the kettle and the fermentor with newly-named Dolcita and Elani hops, plus our house hazy yeast — soft, fluffy oats keep the body full at a sessionable ABV.

Tasting Notes

Peach, Coconut, and Valencia Orange.

Dolcita is the hop variety that names the beer. Together with Elani — another recently-released hop — it builds a flavor stack that reads like a fruit plate: peach, coconut, Valencia orange, caramelized banana.

It sits in the hazy pale ale lane, not the hazy IPA lane — softer, lower bitterness, a touch more sessionable than Walking on Clouds. The oat-forward grain bill gives it that pillowy body without piling on alcohol.

If you want the soft NEIPA texture without the IPA punch, this is the pour. Same hazy lane as Walking on Clouds, dialed back to pale-ale territory.

Appearance
Hazy pale gold, veiled body. Soft white head with quick fall.
Aroma
Huge peach up front — the Dolcita hop's signature. Coconut and Valencia orange behind. A whisper of caramelized banana.
Flavor
Peach right through the middle, oat-soft body, citrus on the back end. Balanced bitterness, restrained — this is the pale-ale lane, not the IPA lane.
Mouthfeel
Soft and fluffy from the oat grain bill. Low-to-moderate carbonation. Full body for a 6%.

How it gets to the glass.

    Hopped twice — once in the kettle, once in the fermentor — with the newly-named Dolcita and Elani hops. Both contribute heavy peach, coconut, and citrus character.

  2. 02

    Soft and fluffy oats in the grain bill keep the body full at a sessionable ABV. House hazy ale yeast strain compounds the fruit aroma during active fermentation.

How is Dolcita different from Walking on Clouds?
Walking on Clouds is a 7% hazy NEIPA — more hop intensity, more body. Dolcita is the same hazy lane dialed back: 6%, lower bitterness, more about the soft body and the peach character. Same texture, lighter touch.
What are Dolcita and Elani hops?
Both are newly-named hop varieties just released to brewers. Dolcita is heavy on peach and stone-fruit character; Elani brings coconut and citrus notes. We're using them in tandem as the defining hop bill for this beer.
