Tasting Notes

Copper. Cream Head. Malt-Forward.

The Vienna is one of the great underappreciated continental lagers. Ours is built on all-German malt, noble hops, and four weeks of cold conditioning.

The Czech side-pull faucet is not decoration. It pours at a controlled rate that aerates the beer gently, building a thick cream head with a different texture than a standard tap. Same beer, different drinking experience — one of the reasons the list is worth visiting in person.

Robust enough for an evening beer, light enough to drink across a tasting session.

Appearance
Deep copper. Thick persistent cream head from the side-pull pour.
Aroma
Toasty Vienna malt, mild caramel, light bread crust, faint floral hops.
Flavor
Pretzel crust and caramel up front. Bitterness is mild and smooth. Long warming finish.
Mouthfeel
Medium body, smooth and round. The side-pull pour gives it a softer texture than a standard tap.
Pairings
  • Pretzels with mustard
  • Bratwurst and sauerkraut
  • Roasted pork
  • Aged Gouda
  • Rye bread with butter

Process

How it gets to the glass.

  1. 01

All-German Vienna malt for the bread-crust character. Noble hops in the kettle.

  2. 02

Four weeks cold. The side-pull pour at service aerates it gently and builds that signature cream head.

The Brewlog

Brewed to spec.

Every batch passes through the same sequence. Nothing leaves the tank early.

The Short Answers

About Vienna Style Lager.

What is a Vienna lager?
An amber-to-copper continental lager built on Vienna malt — toasty, bread-crust, caramel flavors without the roasted notes of a dark lager. It's the richest of our pale lagers before you get to Midnight in the Priory.
What does a Czech side-pull faucet do?
It restricts the beer through a side-mounted lever, aerating gently and building a thick stable cream head. The head insulates the beer and softens the first sip. It's not a gimmick — it's how the style is meant to be poured.
Where can I try it?
