Tasting Notes

The Other Side of the Hop Spectrum.

That Much Further West is the West Coast IPA lane on the tap list — the opposite of a hazy. Brilliant clarity, assertive bitterness, piney resin character that finishes dry.

If Walking on Clouds is the soft hazy lane and Stony Creek is the East Coast middle, That Much Further West is the West Coast end — the IPA for drinkers who want their bitterness named and their hops sharp.

A year-round flagship in the lineup.

Process

How it gets to the glass.

  1. 01

Clean West Coast malt base — pale 2-row with a touch of Munich for color, no caramel sweetness — built to support hop intensity without competing.

  2. 02

Citra, El Dorado, and Strata in the kettle for tropical fruit character. Heavy dry hop on the cold side for piney resin notes. Bittered to a classic West Coast finish.

The Short Answers

About That Much Further West.

How is it different from Stony Creek East Coast IPA?
Different traditions entirely. Stony Creek is the East Coast middle ground — citrus-forward, smooth, restrained bitterness. That Much Further West is West Coast — drier, piney, assertive bitterness, that resinous finish that defines the style. Order both side-by-side for the lesson.
How is it different from Walking on Clouds?
Walking on Clouds is hazy NEIPA — soft body, juicy fruit, low bitterness. That Much Further West is the opposite — brilliant clarity, dry crisp body, assertive piney bitterness. Two ends of the modern IPA spectrum on the same tap list.
On tap right now?
