Named for the Uncle Who Taught Us to Drink Wit

Classic Belgian witbier executed with the same care our lagers get. Spice is background complexity, not foreground flavor.

Named for the family member who introduced us to the style. A quiet acidulated-malt addition makes it more refreshing than a standard wit.

Appearance
Hazy pale straw. Persistent white head. The wheat haze is intentional.
Aroma
Orange peel up front, coriander behind it. Banana and clove from the yeast. A faint lemon thread.
Flavor
Citrus and coriander across the palate. Banana-clove from the yeast adds depth. A subtle lactic snap at the finish — fresh and gently tart.
Mouthfeel
Medium body, silky. Refreshing.

How it gets to the glass.

    Pilsner malt with malted and unmalted wheat. Orange peel, lemon peel, and coriander in the boil.

  2. 02

    A small acidulated-malt addition drops the mash pH and adds a clean lactic snap — a German technique on a Belgian style.

What is sauermalz?
German acidulated malt — barley treated with lactic acid bacteria before kilning. A small amount in the mash adds a clean lactic snap. A German trick on a Belgian style.
How spicy is it?
Spiced, but the spice is background. If you like Hoegaarden or Allagash White, you'll recognize the profile.
